      <image:caption>Em relação a próxima viagem, eu escolheria fácil a Bélgica! A BrewVenture Belga está no topo da minha lista. Com tantos estilos de cervejas maravilhosos, como eu poderia escolher outro lugar? “Lambic”, “Geuze”, “Dubbel”, “Belgian Pale Ale”… a lista é maior do que as justificativas que eu tenho para já estar pensando em outra viagem cervejeira. Sem falar que a Bélgica é um país pequeno cheio de cervejarias históricas e bares imperdíveis como o “Kulminator”. Dessa forma, a logística deve facilitar a exploração. O problema seria realmente escolher quais lugares visitar, já que são tantos (reparem na quantidade de pontos marcados no meu mapa à direita). Eu provavelmente começaria com um dos tours do “Beer Secret” para receber umas dicas de ouro e não me sentir completamente perdido. Depois seguiria as recomendações deles até metade dos bolicheiros me conhecerem pelo nome  Mas mal posso esperar para visitar lugares como a “Brasserie Cantillon”, e todas as Abadias Trapistas como a “Westvleteren”, “Westmalle”, “Chimay”, “Orval” e outras. Outro lugar a não perder é a “De Dolle”. Eu tive o privilégio de participar de uma degustação de 10 garrafas da cerveja especial de Natal que eles fazem, a “Stille Nacht”, aqui em Thessaloniki no ano passado. Devo admitir que a minha capacidade sensorial estava fortemente afetada depois da sétima, oitava garrafa, mas foi incrível ver as diferenças entre cada garrrafa, sabendo que a base da cerveja é mais ou menos a mesma. É uma cervejaria muito criativa que merece uma visita.</image:caption>

      <image:caption>A minha curiosidade de descobrir novas cervejas também se expande a novos estilos. Olhando para o guia de estilos do “BJCP”, eu ainda não experimentei uma “Australian Sparkling Ale” por exemplo. (Bora na BrewVenture Australiana!?). A parte chata? O mercado que decide. Estamos vivendo a era das cervejas lupuladas. “IPAs” e todas as suas primas – como “Hazy IPA”, “Black IPA”, “Cold IPA” – costumam dominar 50 a 70% das torneiras dos bares. Então, para surpresa de zero pessoas, os dados do meu Untappd mostram que mais de 50% dos meus “check-ins” são em cervejas “IPA”. Seria esse então meu estilo favorito! NEEEEM A PAU! Mas é o que está mais disponível. Agora no verão, geralmente fico mais entre as “Sours” e as “IPAs”, principalmente porque estão disponíveis. Ultimamente, ando fissurado em estilos mais simples como uma “Munich Helles” ou uma “Bohemian Pilsner”. Mas encontrar amostras frescas e boas desses estilos? Não é uma tarefa fácil. Felizmente, eu tenho meus lugares de refúgio – como o “3 Brothers Brews”, na beira do mar com vista privilegiada para o por do sol. Da última vez que lá estive, bebi uma “Kellerbier”, uma “Bohemian Pilsner” e uma “Dark Lager”. Poderia beber a noite inteira qualquer uma delas, sensacionais, diretamente das torneiras! Como podem ver, tudo DEPENDE! Cerveja favorita, estilo favorito, não são coisas estáticas. Dizem que o nosso paladar está sempre mudando, e cabe a nós fornecer material para que ele continue a sua jornada. Acredito fielmente nisso, e vou continuar compartilhando a minha jornada por aqui.       <image:title>Blog content PT - Estilos do BJCP classificados por história: Irish Stout - Irish Stout - Na boca, o BJCP descreve a dualidade referida no início. Então podemos ter o malte tostado como café e um final seco, ou podemos ter algum dulçor de malte e um final mais equilibrado. Ainda, o equilibrio pode ser trazido pela cremosidade, por um frutado de intensidade média-baixa ou por um sabor de lúpulo médio. Ou seja, existe um certo espaço para interpretação dos cervejeiros. Mas na nossa amostra de "Guinness Draught", assim como no aroma, o café veio ao de cima. O sabor remetia realmente a um café expresso de média-alta intensidade. Notas de cacau de baixa intensidade ainda eram percebidas em segundo plano, mas eram logo ofuscadas pelo amargor de grãos tostados, trazendo um final seco e bem definido. Na sensação de boca o BJCP descreve as "Irish Stout" com um corpo que pode ser de médio-leve a médio-cheio. Especialmente nas versões com nitro, se espera uma cremosidade. A carbonatação pode ser de baixa a média. E apesar de ter versões com muito lúpulo de amargor e grãos tostados, são cervejas que impressionam pela suavidade. Uma leve adstringência também é aceitável pela quantidade de grãos torrados, mas qualquer aspereza é considerada uma falha de estilo. Nessa "Guinness Draught" encontramos um corpo médio-leve e uma certa textura cremosa do nitrogênio. Ainda, a carbonatação era média-baixa e uma leve adstringência podia sim ser sentida. Porém, a impressão geral é espetacular. É uma amostra que aposta mais no perfil do malte remetendo a café e consegue entregar uma "drinkability" muito alta. Seja pelo final seco, seja pela cremosidade, tudo contribui para o equilíbrio no copo e o sucesso que a Guinness conquistou mundo a fora.</image:title>

      <image:title>Blog content PT - Estilos do BJCP classificados por história: Irish Stout - Irish Stout - Sendo também uma lata com dispositivo de nitrogênio, o efeito cascata reversa no serviço também foi observado, mas muito menos duradouro do que o observado na "Guinness Draught". Digo isso apenas a nível de curiosidade, uma vez que o BJCP não faz qualquer referência a esse aspecto. Porém, a aparência pareceu bastante adequada ao estilo, uma cerveja preta, opaca e com um colarinho cremoso generoso de cor bege mais escura. No aroma, notas de cereais tostados apareciam com intensidade baixa. E um aroma mais agudo que remetia a uma torra muito prolongada, quase queimada predominava, fugindo um pouco do que o BJCP preconiza para o estilo (notas queimadas não são aceitas em nenhum estilo). No sabor era mais nítida uma semelhança com gosto de café de média-alta intensidade, porém novamente, um sabor de grãos muito tostados e não necessariamente agradável. O equilíbrio era totalmente virado para esse amargor quase queimado, e ao menos o final era seco e bem definido. A sensação de boca trazia um corpo médio e uma certa sensação sedosa. A carbonatação era baixa e a adstringência média. Sendo assim, a impressão geral é de uma boa cerveja mas com algumas falhas de estilo. O aroma e sabor de grãos que remete mais ao queimado do que ao tostado deveria ser evitado, e isso pode facilmente ser corrigido com uma revisão na quantidade de grãos tostados utilizados na receita. Todos temos tolerância diferentes a esses sabores, e talvez os amantes da O’hara’s prefiram as suas "Irish Stouts" assim. Ainda, foi apenas uma amostra, não posso assumir que a cerveja seja sempre assim. Assim que der, vou dar outra oportunidade para essa cerveja, o ideal seria encontrá-la em barril.</image:title>

Nessa cerveja o efeito cascata é ainda mais curto, quase nem se notou. Mesmo assim, a cerveja apresentou uma cor preta e opaca. O colarinho também era alto, talvez não tão cremoso quanto as outras duas, mas de coloração bege, tal como manda o figurino, ou melhor o BJCP. No aroma percebemos que essa é uma variante mais equilibrada de "Irish Stout". Foi possível detectar notas de caramelo, toffee e casca de pão em baixa intensidade. E em média intensidade os aromas de cereais tostados que remetem a café. Ainda, um aroma de lúpulo terroso em baixa intensidade também se fez presente. No sabor percebemos justamente um certo dulçor de malte que remete ao caramelo em baixa intensidade e depois os sabores dos grãos mais tostados em intensidade média. Além de café remete a chocolate amargo/negro. O amargor é baixo a moderado e remete novamente a cereais tostados. Essa amostra apresentou um equilíbrio notável, sendo que o final traz primeiro o sabor de chocolate e depois suavemente deixa um retrogosto de café. Na sensação de boca temos uma textura sedosa e um corpo médio. A carbonatação era moderadamente baixa e uma adstringência muito leve também era perceptível, porém agradável. A impressão geral dessa amostra foi espetacular. Pensava eu que a "Guinness Draught" era a rainha das "Irish Stout", mas nessa comparação, o equilíbrio da "Murphy’s Irish Stout" agradou muito mais ao meu paladar. Essa viagem do caramelo, passando pelo chocolate e chegando nos sabores tostados de café é realmente impressionante. E de acordo com o BJCP, qualquer uma delas seria um bom exemplo do estilo. Aqui é mesmo o meu paladar que gostou mais, talvez por não ter experimentado antes, essa versão mais equilibrada. Não se preocupem, a "Guinness Draught" vai ter sempre um lugar no meu coração.</image:title>

Cada semana tínhamos um módulo novo. Porém, temos acesso a todas as aulas e discussões por um ano. Uma das coisas que achei mais interessante eram as propostas de avaliação sistemática de cervejas (sim, degustando) que complementava muito bem o material teórico, com acesso a um tutor para tirarmos dúvidas se necessário. Ao final do curso, a certificação ainda dependia de uma prova que fazíamos online. Eu nunca tinha feito uma prova dessas que necessita de ‘autovigilância’, e foi bem engraçado ter que colocar o celular/telemóvel para gravar por uma plataforma específica eu mesmo respondendo as questões no computador. Enfim, eram 50 perguntas em 60 minutos. A certificação é dada como "Aprovado" se atingirmos de 55% até 69%; "Aprovado com mérito" de 70 a 84%; e, finalmente, "Aprovado com distinção" se atingirmos mais de 85%. Esse que vos fala teve 94% de aproveitamento na prova e portanto foi APROVADO COM DISTINÇÃO! (palmas para mim  obrigado!).</image:title>

      <image:caption>When it comes to the next beer adventure, I’d definitely pick Belgium! The Belgium Brewventure is still on my list. I mean, how can anyone resist so many amazing beer styles? Lambic, Geuze, Dubbel, Belgian Pale Ale… the list is longer than my excuses to go on another beer trip! Plus, Belgium is a small country bursting with historic breweries and iconic bars like Kulminator, so exploring shouldn’t be too complicated (famous last words!). On the right, you can see how my ‘places to visit’ map looks like for Belgium. So, the real challenge? Deciding where to go first. I’d definitely kick things off with a BeerSecret tour to get insider tips and avoid looking completely like a lost tourist. Then, of course, I’d follow local recommendations until I’m on a first-name basis with half the bartenders. I can’t wait to visit places like the Brasserie Cantillon, and all the Trappist Abbeys like Westvleteren, Westmalle, Chimay, Orval and others. Another place to not miss is De Dolle. I had the pleasure of participating in a tasting of 10 bottles of their special Christmas beer, the ‘Stille Nacht’ here in Thessaloniki last year. I must confess things became very dizzy after the seventh bottle, but it was incredible to taste the differences between beers that more or less have a similar base. It is a very creative brewery and a visit would be more than deserved.</image:caption>

      <image:caption>That curiosity to try new beers extends to discovering new styles too. According to BJCP guidelines, I’ve still never had an Australian Sparkling Ale for instance. (Australian Brewventure, anyone?‍♂️) The sad part? The market decides a lot. We live in the age of hop-driven beers. IPAs and all their cousins — Hazy, Black, Cold, etc. — often dominate 50–70% of the taps at bars. So it’s no surprise that, according to my Untappd data, over 50% of my check-ins are IPA-related. Is that my favorite style? HELL NO. But it’s what’s available. In hot weather, I usually go for IPAs and Sours — because they’re there. Lately, I’ve been loving simpler styles like Munich Helles and Bohemian Pilsners. But fresh, well-poured examples? Hard to find. Thankfully, I have my safe places — like 3 Brothers Brews, right on the seafront with an amazing sunset view. Last time, I had their Kellerbier, Bohemian Pilsner, and Dark Lager. Honestly? I could’ve stayed all night drinking any of them. So yeah — no need to pick just one style when you can find great beer in almost all of them. As you can see, it all depends! Favorite beer, favorite style, it is not something steady. Some say our palate is constantly evolving and it is up to us to keep challenging it! So, we can have roasted malt resembling coffee with a dry finish, or we can have some malt sweetness and a more balanced finish. Additionally, the balance can be achieved through creaminess, a medium-low fruity intensity, or a medium hop flavor. In other words, there is some room for interpretation by brewers. But in our sample of Guinness Draught, just like in the aroma, the coffee stood out. The flavor resembled espresso with medium-high intensity. Low-intensity cocoa notes were still noticeable in the background, but they were quickly overshadowed by the bitterness of roasted grains, bringing a dry and well-defined finish. Regarding mouthfeel, the BJCP describes Irish Stout as having a body that can range from medium-light to medium-full. Especially in nitro versions, creaminess is expected. Carbonation can be low to medium. And despite some versions having a high hop bitterness and roasted grains, these beers stand out for their smoothness. A slight astringency is also acceptable due to the amount of roasted grains, but any harshness is considered a flaw in the style. In this Guinness Draught, we found a medium-light body and a certain creamy texture from the nitrogen. Additionally, carbonation was medium-low, and a slight astringency was indeed noticeable. However, the overall impression was spectacular. This sample focuses more on the malt profile reminiscent of coffee and delivers very high drinkability. Whether due to the dry finish or the creaminess, everything contributes to the balance in the glass and the worldwide success that Guinness represents.</image:title>

      <image:caption>Also being a can with a nitrogen widget, the reverse cascade effect was observed during pouring, though it was much shorter-lived than in the Guinness Draught. I mention this purely as a curiosity, as the BJCP does not make any reference to this aspect. However, the appearance seemed quite appropriate for the style—a black, opaque beer with a generous, creamy, darker beige head. In the aroma, toasted cereal notes appeared at a low intensity. A sharper aroma, reminiscent of an overly prolonged, almost burnt roast, was predominant, deviating somewhat from what the BJCP prescribes for the style (burnt notes are not accepted in any style). In terms of flavor, there was a clearer resemblance to medium-high intensity coffee, but once again, the taste of heavily roasted grains, which was not necessarily pleasant, stood out. The balance leaned entirely toward this almost burnt bitterness, though at least the finish was dry and well-defined. The mouthfeel presented a medium body with a somewhat silky texture. Carbonation was low, and a medium astringency was noticeable. Overall, the impression is that it is a good beer, but with some style flaws. The aroma and flavor of grains leaning more towards burnt rather than toasted should be avoided, which could easily be corrected by adjusting the amount of roasted grains used in the recipe. We all have different tolerances for these flavors, and perhaps O’Hara’s fans prefer their Irish Stouts this way. Additionally, this was just one sample, so I can’t assume the beer is always like this. As soon as I get the chance, I’ll give it another try—ideally, I’d like to find it on draft.</image:caption>

Even so, the beer displayed a black, opaque color. The head was also tall, perhaps not as creamy as the other two, but with a beige hue, just as expected—or rather, as prescribed by the BJCP. In the aroma, we noticed that this is a more balanced variant of an Irish Stout. Notes of caramel, toffee, and bread crust were detectable at low intensity, while toasted cereal aromas reminiscent of coffee appeared at medium intensity. Additionally, a faint earthy hop aroma was present. In terms of flavor, we noticed a slight malt sweetness reminiscent of caramel, followed by medium-intensity roasted grain flavors. Besides coffee, it also evoked dark/bitter chocolate. The bitterness was low to moderate and again leaned toward roasted cereals. This sample displayed remarkable balance, with the finish first bringing out the chocolate flavor and then gently leaving a coffee aftertaste. The mouthfeel was silky, with a medium body. Carbonation was moderately low, and a very light astringency was perceptible, though pleasant. Overall, this sample was spectacular. I used to think Guinness Draught was the queen of Irish Stouts, but in this comparison, the balance of Murphy’s Irish Stout was much more pleasing to my palate. This journey—from caramel, through chocolate, to roasted coffee flavors—is truly impressive. And according to the BJCP, either of them would be a great example of the style. In this case, it was simply my taste that leaned toward this more balanced version, perhaps because I hadn’t tried it before. Don’t worry—Guinness Draught will always have a place in my heart.</image:title>

      <image:title>Blog EN - WSET Level 2 Award in Beer passed with distinction!  - The course was relatively short, starting in mid-September and running through the end of October. Each week, we had a new module. However, we have access to all the classes and discussions for a year. One of the things I found most interesting was the systematic beer evaluation exercises (yes, tasting ), which complemented the theoretical material very well, along with access to a tutor for any questions we might have. At the end of the course, the certification depended on an online exam. I had never taken a test requiring "self-monitoring" before, and it was quite amusing to have to set up my phone to record myself via a specific platform while answering the questions on my computer. The certification is awarded as follows: "Pass" for scores between 55% and 69%, "Pass with Merit" for scores between 70% and 84%, and "Pass with Distinction" for scores above 85%.
